Save Money Eating Healthy at Home

Here's what you'll need:


1 1/2 cups brown rice
3 1/2 cups water
1 red ( or purple ) onion  chopped
1/2 cup chopped celery
1/2 cup chopped water chestnuts
1 can cream of  celery soup
1 1/2 cups 1% milk
1  16 ounce package frozen broccoli florets - chopped
1/2 pound grated or sliced cheese
3 Tablespoons butter
 


Let's start Cooking:



1. Mix brown rice, salt, and 3 cups of water in large saucepan and bring to a boil.

2. Cover and simmer for 15 minutes. Remove saucepan from heat and set aside for additional 15 minutes.

3. Saute onions in margarine or butter until tender.

4. Mix soup, milk, 1/2 cup of water, onions, and rice. Spoon mixture into a greased baking pan.

5. Thaw and drain the vegetables and then spread over the rice mixture.

6. Spread the cheese evenly over the top and bake at 350 degrees for 25-30 minutes until cheese is melted and rice is bubbly.
