Cranberries have been a popular and nutritious part of healthy diets even before our Forefathers came upon North America. The Indians who lived here enjoyed cranberries as part of their diet! These deep red berries are somehow related to blueberries. Cranberries grow wild - especially in the northeast. Some historians suggest the Indians introduced cranberries to the early pilgrims!

   Cranberries are rich in healthy compounds called tannins and phenols. The health benefits of cranberries are well documented and time-proven! They pump up the healthy - HDL ( the good cholesterol ) and help lower LDL ( the bad stuff ).  They are also famous for helping stave off bladder infections.  Some suggest that cranberries even help ward off cancer!

Try this easy recipe for tasty pumpkin and cranberry muffins:


2 cups flour
3/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 teaspoon allspice
1/3 cup extra virgin olive oil
2 large eggs
3/4 cup canned pumpkin
2 cups fresh or frozen chopped cranberries


   Lets get ready to Bake:

Sift together the flour, sugar, baking powder, cinnamon.

Beat oil, eggs, and pumpkin together until well blended.

Add the blended pumpkin and eggs to the sifted flour and sugar. Stir until moistened.

Add in chopped cranberries.
 
Spoon into paper lined muffin cups.

Bake at 400 degrees for 25 minutes. 

Keep plenty of fresh and dried cranberries on hand for easy and nutritious snacks!
