tasty pumpkin and cranberry muffins:
2 cups flour
3/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 teaspoon allspice
1/3 cup extra virgin olive oil
2 large eggs
3/4 cup canned pumpkin
2 cups fresh or frozen chopped cranberries
Lets get ready to Bake:
Sift together the
flour,
sugar, baking powder, cinnamon.
Beat oil, eggs, and pumpkin together until well blended.
Add the blended pumpkin and eggs to the sifted flour and sugar. Stir
until moistened.
Add in chopped cranberries.
Spoon into paper lined muffin cups.
Bake at 400 degrees for 25 minutes.
