Here's what you'll need:


1 Tablespoon extra virgin olive oil
1 medium chopped onion
1 yellow pepper ( green pepper works fine too and costs less! )
2 cups organic chicken broth, low sodium
2 cups cooked, diced turkey
2 cans diced tomatoes
2 cans butter beans - drained and rinsed
1 bag frozen corn

 


Let's get Cooking!



1. Heat olive oil in a pan. Add onion and cook in oil until tender.

2. Combine broth, turkey, cooked onion and remaining ingredients in dutch oven or slow-cooker. Cook on medium-low heat for a one hour.

Cover and let simmer over very low heat. Enjoy!
