Tasty Three Bean Chili
| What you'll need: |

| 1 lb dry red beans |
|
| 1 lb dry black beans |
|
| 2 qt water |
|
| 1½ cups onion, chopped |
|
| 2 lbs chopped sirloin |
|
| 2 (15 oz) cans of diced tomatoes |
|
| 2 (28 0z) cans of chili beans |
|
| 4 bay leaves |
|
| 1 cup red pepper, chopped |
|
| 1 cup green pepper, chopped |
|
| 3 Tbsp garlic, chopped |
|
| 3 Tbsp parsley, chopped |
|
| 4 tsp dried peppers crushed |
|
| 1 tsp chili pepper |
|
| 1
tsp black pepper |
|
1. Pick through beans to remove bad beans; rinse thoroughly and soak
overnight.
2. In a large pot, combine beans, fresh water, onion, and bay leaves.
Bring to a boil; reduce heat. Cover and cook over low heat for about
1½ hours or until beans are tender.
3. Brown the chopped sirloin. ( You can easily substitute your favorite
ground meat - or leave it out if you want. )
4. Now, back to the large pot - Add in your browned sirloin, 2 cans of
chili beans ( with the sauce ), 2 cans of diced tomatoes, red and green
pepper, garlic, dried peppers, chili, and black pepper.
Cover and cook over low heat for about
2 hours or until beans are tender.
5. Enjoy with hot links or your favorite brats. Corn bread is also good
with this hearty chili!
