Lentils have been enjoyed for centuries. They are an great source of folate and offer an excellent source of dietary fiber.  They are also a good source of  manganese and iron.  Toss in a decent source of  protein, phosphorus, copper, thiamin and potassium. It's easy to see why lentils are so good for you! Enjoy this heart-healthy and easy to make lentils casserole this weekend or anytime.

Here's all you need:

1 cup rinsed lentils
3/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper (optional)
1 large chopped onion
1/4 teaspoon garlic powder (optional)
1 can (16 ounces) tomatoes
4 sliced carrots 
1/2 cup cheddar cheese, shredded

Let's Get Cooking:

1. Combine lentils, water, seasonings, onion, and tomatoes in a large casserole dish.

2. Cover tightly with lid or foil.

3. Bake at 350 degrees for 30 minutes.

4. Remove from oven and add carrots. Stir.

5. Cover and bake another 30 minutes longer.

6. Remove cover and sprinkle cheese on top.

7. Return to the oven for another 5 minutes, until cheese melts.
