Warm your tummy on a cold winter evening savoring this nutritious
casserole!
Here's all you need:
1 cup rinsed lentils
3/4 cup water
1/2 teaspoon salt
1/4 teaspoon pepper (optional)
1 large chopped onion
1/4 teaspoon garlic powder (optional)
1 can (16 ounces) tomatoes
4 sliced carrots
1/2 cup cheddar cheese, shredded
Let's Get Cooking:
1. Combine lentils,
water, seasonings, onion, and tomatoes in a large casserole dish.
2. Cover tightly with lid or
foil.
3. Bake at 350 degrees for 30
minutes.
4. Remove from oven and add
carrots. Stir.
5. Cover and bake another 30
minutes longer.
6. Remove cover and sprinkle
cheese on top.
7. Return to the oven for
another 5 minutes, until cheese melts.
