Pumpkin Whole Wheat Pancakes

     Start every day with a healthy breakfast. Pancakes are a perrenial favorite among kids of all ages. Enjoy these healthy, whole wheat and pumpkin panckes with your family! Easy and quick these pancakes are a good source of vitamin A and offer a little calcium too!


Here's all you'll need:

2 cups whole wheat flour
4 Tablespoons brown sugar
1 Tablespoon baking powder
1 1/2 teaspoon pumpkin pie spice
1/2 cup wheat germ
1 teaspoon salt
1 egg
1 can canned pumpkin
1 3/4 cup milk
4 Tablespoons extra virgin olive oil

1. Mix the whole wheat flour, wheat germ, brown sugar, baking powder, pumpkin pie spice and salt in a big mixing bowl.
2. In another bowl, combine egg, canned pumpkin, milk and olive oil, mixing well.

3. Add the pumpkin mix to the large bowl with your whole wheat flour mix, stirring just until moist. Batter may be lumpy. (For thinner batter, add a little more milk).

4. Warm up a large skillet or a flat griddle on medium heat. Pour in a couple tablespoons of extra virgin olive oil and swish it around while the pan warms up.

5. Pour batter into hot pan or griddle. Cook until bubbles begin to burst, then flip pancakes and cook until golden.

6. Serve with your favorite pancake toppings. We like Log Cabin - or real maple syrup!
