Homemade Veggie-Turkey Casserole

Here's all you need:


1 Tablespoon extra virgin olive oil
1 medium chopped onion
1 green pepper
2 - 3 medium sliced potatoes
2 cups sliced carrots
1/4 teaspoon black pepper
1 pound browned and drained ground turkey
1 bag of frozen peas
1 can tomato-soup ( or try creamy celery if you like )  
1 bag frozen corn

 


Let's get Cooking!



1. Heat olive oil in a pan. Add ground turkey and chopped onion. Stir until turkey is browned. Drain.

2. Combine turkey, cooked onion and remaining ingredients in a big casserole or dutch oven. Add the soup last!

3. Cover and bake at 350 for 45 minutes.

4. Remove cover - savor that tummy warming aroma! bake for another 10 - 15 minutes.

5. Enjoy with family and friends!
